Peel, core, and cut apples into 1/2-inch-thick slices. Mix vanilla, cinnamon, and nutmeg.
Melt butter in a medium skillet over medium heat. Add apples and cook, stirring occasionally, until apples are tender and browned. Remove from heat and put aside.

Heat a griddle or nonstick frying pan over medium heat. Spray with olive oil. Using a 1/4-cup measure, pour batter onto the hot surface. Cook for two to three minutes on one side, then flip over and cook 2-3minutes more, or until desirably browned.
