Ingredients
- For Cinnamon apple topping
- 3 small apples such as Macintosh
- 1 teaspoon pure vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon unsalted butter
- For the Pancakes
- 3/4 cup buckwheat flour
- 1/4 cup oat flour
- 1/2 cup white rice flour
- 3 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon sea salt
- 1 teaspoon baking soda
- 1/2 cup unsweetened applesauce
- 1 cup low-fat milk
- 1 teaspoons olive oil or gluten-free cooking spray

Instructions
To make the topping
- Peel, core, and cut apples into 1/2-inch-thick slices. Mix vanilla, cinnamon, and nutmeg.
- Melt butter in a medium skillet over medium heat. Add apples and cook, stirring occasionally, until apples are tender and browned. Remove from heat and put aside.
to prepare the pancakes
- In a large bowl, blend together flours, sugar, cinnamon, salt, and baking soda. stir in applesauce and milk until fully mixed.
- Heat a griddle or nonstick frying pan over medium heat. Spray with olive oil. Using a 1/4-cup measure, pour batter onto the hot surface. Cook for two to three minutes on one side, then flip over and cook 2-3minutes more, or until desirably browned.
- Serve topped with warm apples
Recipe Notes
Allergen Notes and Additional Allergen Substitutions
- To keep soy free, use a soy-free cooking spray or olive oil
- To make milk free, substitute margarine for butter and use dairy-free milk
- To make vegan, substitute coconut oil for the butter and use dairy-free milk
Other tips: Keep pancakes warm in a 250 degree F oven until all are cooked and ready to serve.
