    Instructions
    To make the topping
    1. Peel, core, and cut apples into 1/2-inch-thick slices. Mix vanilla, cinnamon, and nutmeg.
    2. Melt butter in a medium skillet over medium heat. Add apples and cook, stirring occasionally, until apples are tender and browned. Remove from heat and put aside.
    to prepare the pancakes
    1. In a large bowl, blend together flours, sugar, cinnamon, salt, and baking soda. stir in applesauce and milk until fully mixed.
    2. Heat a griddle or nonstick frying pan over medium heat. Spray with olive oil. Using a 1/4-cup measure, pour batter onto the hot surface. Cook for two to three minutes on one side, then flip over and cook 2-3minutes more, or until desirably browned.
    3. Serve topped with warm apples

    Allergen Notes and Additional Allergen Substitutions

    1. To keep soy free, use a soy-free cooking spray or olive oil
    2. To make milk free, substitute margarine for butter and use dairy-free milk
    3. To make vegan, substitute coconut oil for the butter and use dairy-free milk

    Other tips: Keep pancakes warm in a 250 degree F oven until all are cooked and ready to serve.
